Ever since my office location moved and my commute is a little more difficult, I’ve been trying to pack my meals more to not only save time but also money. My old routine was stopping by Starbucks every morning for breakfast and coffee and well, that definitely adds up as you can see from this blog post. So in addition to eating breakfast at home, packing breakfast and lunch, I decided that I will also need to pack a snack since I do tend to get hungry throughout the day. I came across a really easy recipe for a quick snack and the ingredients are mostly things you just have around in your pantry anyway.

½ cup creamy peanut butter (can be substituted with any nut butter)
1 large banana
1½-2 cups old fashioned oats (depends on consistency)
⅔ cup coconut flakes
¼ cup ground flax seed
1 tablespoon of agave (can be substitued with any liquid sweentener)
1. In a large bowl, combine the ingredients and mix using a silicone spatula or fork. Make sure that the banana is mashed and ingredients are mixed well. If the consistency is too sticky you can slowly add the remaining oats.
2. Place the bowl in the fridge for at least 30 minutes to allow the ingredients to fully bind and become pliable.
3. Remove the bowl from the fridge and begin to roll the dough into 1″ inch sized balls. Use an ice cream scoop to help with measurements. Lightly wet the ice cream scoop and your hands so the dough doesn’t stick to your hands.
4. Enjoy right away or store in an airtight container in the fridge for up to two weeks.
I enjoyed making this super easy snack. It really gives you a boost and actually makes a great breakfast fix on the go when you’re in a hurry. It’s pretty filling when you’re in a pinch too. Are there any quick go-to healthy snacks that you like?
